North Cyprus Countryside – Salsify
In a recent walk in North Cyprus I came upon a flowering wild Salsify or ‘goatsbeard’ as it is sometimes known. I used to grow the edible purple variety of Salsify in my garden and although I cannot confirm that the roots tasted like oysters as they were reputed to they were delicious steamed.
When I discovered that a variety of the edible plant grew wild in Cyprus my first reaction was to cook it and eat it. I quickly chickened out, imagining foolishly poisoning myself, and furthermore had no desire to dig up a wild plant which I might later discover was a rarity.
